1Stir the salt into the yogurt.
2Line a sieve with cheesecloth over a bowl and pour in the yogurt.
3Fold the cloth over and refrigerate 24-48 hours to drain.
4The longer it drains, the firmer the labneh: 24 h is spreadable, 48 h is rollable into balls.
5Serve spread on a plate with a groove filled with olive oil, dusted with dried mint.
Chef's Tip
- Straining, not cooking, is what makes labneh: the whey drains and the solids turn spreadable.

- Salt added before draining seasons through and speeds the whey release.
- Full-fat yogurt is required — low fat drains into chalk.
