Oven and rack
• Oven at 200–220 °C.
• Upper-middle rack. Preheat 10–15 min.
Cut size, oil and salt
• Size: 2–3 cm chunks (or 1 cm batons).
• Olive oil: 30–50 ml per 30×40 cm sheet pan.
• Salt: 6–8 g per 1 kg veg. Adjust at the end.
Don’t crowd
• One even layer; use two pans if needed.
Flip once
• Flip halfway for even browning.
Finishes
• Acid: 10–15 ml lemon juice or vinegar at the end.
• Herbs: parsley/dill/basil after roasting; thyme/rosemary can roast.
• Heat: 2–3 g chili flakes.
• Sauces: tahini drizzle, pesto, lemony yogurt.
Timing guide (200 °C / 220 °C)
• Potatoes 2–3 cm: 35–45 / 30–40 (parboil 5–7 min = extra crisp).
• Carrots batons: 25–35 / 20–30.
• Cauliflower florets: 25–30 / 20–25.
• Broccoli florets: 18–22 / 15–18.
• Zucchini half-moons: 16–20 / 12–16 (200 °C prevents limp).
• Eggplant cubes 2–3 cm: 25–35 / 20–30 (a touch more oil = creamy).
• Bell peppers strips: 18–22 / 15–18.
• Red onion wedges: 22–28 / 18–24.
• Cherry tomatoes: 14–18 / 12–15 (don’t stir).
Helpful tools
• Rimmed sheet pan 30×40 cm, parchment or silicone mat.
• Wire rack, oven thermometer, oil mister.
