Zeytinyağlı Taze Fasulye (Turkish Green Beans in Olive Oil)
Olive-oil braised green beans with tomatoes - served cold, as Turks do. A side dish that behaves like a main and tastes even better tomorrow.

1Soften the onion in the olive oil, 8 minutes - generous oil is the dish's name (zeytinyağlı = 'with olive oil').
2Add garlic; 1 minute.
3Add tomatoes, sugar, salt, pepper; simmer 10 minutes into a sauce.
4Add the beans; toss; cover and cook on low 25-30 minutes until very tender - Turkish style is soft, not squeaky.
5Cool completely and serve at room temperature, drizzled with more oil, with lemon and dill.
6Even better the next day - make double.
