1Whisk flour, yeast, sugar and salt. Add the lukewarm water gradually, whisking until you have a thick, sticky, elastic batter. Cover and rise 1 hour until bubbly.
2Make the syrup: warm honey, water and cinnamon stick (do not boil hard). Keep warm.
3Heat oil to 180°C. Dip a spoon in oil, scoop batter and push portions into the oil with another spoon. Fry 3-4 minutes, turning, until deep golden.
4Drain briefly and drop the hot puffs straight into the warm syrup for 30 seconds. Remove with a slotted spoon, finish with walnuts and cinnamon, serve immediately.
Chef's Tip
- The batter is wet on purpose: high hydration plus instant yeast creates the hollow, crisp shell with an almost empty center.

- Frying at a true 180°C sets the crust before the puffs absorb oil — cooler oil makes them greasy.
- A 30-second syrup bath seasons the crust; longer soaking turns the crunch to mush.
