Golden phyllo pie with a rustic filling of pork and rice — the festival dish of Epirus, cut into thick squares that hold together by the rice, not by luck.

1Brown the minced pork with onion, garlic and cinnamon. Add 200 ml water, cover, simmer 30 minutes until tender.
2Stir in the raw rice and mint; the mixture must be moist but not soupy — the rice finishes cooking inside the pie, absorbing the juices.
3Layer 4 phyllo sheets in a buttered pan, spread the filling, cover with the rest, oil each sheet. Bake at 180°C for 45 minutes until deep golden. Rest 20 minutes before cutting.

Chef's Tip

  • Raw rice finishes inside the pie and drinks the meat juices — that is the trick that binds the filling into cuttable squares.
More tips ↓
  • Cinnamon and mint in a meat pie is Epirote tradition: the mint cuts the richness of the pork.
  • The 20-minute rest lets the steam redistribute; cut hot and the filling collapses.
