1Slice the pork into thin strips against the grain.
2Whisk olive oil, lemon juice, garlic, oregano, cumin, paprika, salt and pepper in a bowl.
3Toss the pork in the marinade and refrigerate for at least 2 hours, ideally overnight.
4Preheat the oven to 220°C.
5Stack the marinated strips tightly on a vertical skewer or press into a loaf tin.
6Roast for 45-50 minutes until deeply browned at the edges.
7Rest 10 minutes, then shave the meat thin with a sharp knife.
8Warm the pitas in a dry pan for 30 seconds per side.
9Spread tzatziki over each pita, add pork, tomato, onion and fries.
10Roll tightly and serve immediately.
Chef's Tip
- Slicing the pork thin after roasting recreates the spit-shaved texture without a vertical rotisserie.
More tips ↓Show less ↑
- Stacking the strips tightly before roasting keeps the interior from drying out.
- Warm pita is essential: cold pita stiffens and cracks when rolled.
