Lemon & Potato Roast Chicken (Mediterranean Style)
Juicy roast chicken over potatoes with garlic, lemon, olive oil and oregano. One-pan drippings make a bright, savoury sauce.

Ingredients
•• 1.6 kg chicken, cut into pieces (or spatchcocked)
•• 800 g waxy potatoes, 3 cm chunks
•• 200 g red onion, wedges
•• 6 garlic cloves (≈ 24 g), crushed
•• 2 lemons: zest of 1 + 60 ml juice (plus slices to serve)
•• 60 ml extra virgin olive oil
•• 10 g fine salt (divided) + extra for potatoes
•• 2 g black pepper
•• 6 g dried oregano (or 8–10 g fresh, chopped)
•• 120 ml dry white wine or chicken stock
•• Chopped parsley to finish
Instructions
1Marinate (optional): mix 30 ml oil, zest of 1 lemon, 30 ml juice, 5 g salt, pepper, 3 crushed garlic cloves and oregano; coat chicken; chill 2–12 h.
2Preheat: oven 220 °C, rack in the upper third.
3Base: toss potatoes + onion with 30 ml oil, 1–2 g salt and 1 minced garlic clove; spread in a single layer.
4Arrange chicken: place skin-side up over potatoes; add 120 ml wine/stock and any reserved marinade.
5Roast hot: 20 min at 220 °C to colour.
6Finish: 200 °C for 25–35 min until golden and thickest part reads 75 °C.
7Extra crisp (optional): broil/grill 1–3 min.
8Rest & pan sauce: rest 10 min; stir to emulsify drippings; reduce briefly if needed; brighten with 30 ml lemon juice; season.
9Serve: scatter parsley; add lemon slices.
